Inspector notes: 1200-23-01-.03(3)(b)1. Raw beef in a pot with plastic wrap cover was found in the walk-in-cooler next to covered containers of salsa. A covered container of shredded cheese was found to the right of stacked covered containers of raw chicken and beef. PIC moved the pot of raw beef to be next to the other raw proteins and moved the cheese to be by the sauces. All items were covered well and no migration of raw meat juice was observed. Large bag of carrots found on the floor of the walk-in-cooler. Please make sure foods are kept off the floor.

Inspector notes: 1200-23-01-.04(1) Establishment using plastic grocery style bags to store prepped items in the freezer. Discussed that a food grade container or bag must be used. Employee transfered items into a plastic bag with a zipper. Salsa bowl was observed in a bulk container of flour to be used as a scoop. PIC removed the bowl. Note that this is not the intended purpose of the bowl. Please use a scoop with a handle that does not touch the product.
