Inspector notes: sausage patties inside of two-door lowboy cooler 1 were at 72F. kitchen staff not present, but were able to be reached. patties were prepped approximately 45 minutes before time of inspection. left message that they should be stored with their lids ajar to allow airflow or leave them to cool longer on thin layers on sheet pans.
