Inspector notes: observed dish machine in use not properly dispensing sanitizer, after three attempts zero ppm chlorine observed in dish machine. corrective action, discussed proper cleaning of food contact surfaces with pic. shut down dish machine, set up three compartment sink with quat for time being. will check back at follow up for corrections.

Inspector notes: observed prime rib, French onion soup, meatballs, shredded chicken cooling at room temperature for about an hour and a half. without intervention would not have reached proper temperature within time frame. corrective action, discussed with pic and moved to coolers, all temperatures dropping properly.
