Inspector notes: 1200-23-01-.03(5)(a)5. Observed ham and turkey wrapped tightly in plastic wrap and stored 3 layers deep in the prep top cooler. The internal temperature was at 44-46 F. PIC stated that the foods have been in the cooler for less than 4 hours. Correction: The ham and turkey were laid out single layer on flat tray and placed in walk-in cooler to rapidly cool. Make sure the foods cool to 41 F within 4 hours.
