Inspector notes: PIC can not tell or explain any of the symptoms or illnesses listed on health policy. Providing online link to fact sheets for PIC or owner to print off and post and go over with current and future employees. PIC states he doesn't know of anyone in past few weeks being sick at his time.

Inspector notes: Several small individual plastic containers of salsa dated 07/15. COS by embargoing approximately 1 lb. Container of cottage cheese dated 12/21/24. COS by embargoing approximately 1 lb.

Inspector notes: Storing roach spray in properly. COS by having employee move to safe location.

Inspector notes: Current person could not answer any questions due to always saying you have to ask her. Even about if she has a pesticide company that comes periodically and did not know that in use utensils needed to be washed, rinsed and sanitized or replaced every 4 hours. COS by educating PIC and sending online fact sheets with Demonstration of Knowledge.

Inspector notes: Opened drawer to prep table and crawling live insects went everywhere to floor and on top of prep table where food is being kept. Follow up needed in 10 days to verify certified pest control company has been here and proof has one hired to come periodically. Cut celery in walk in cooler was extremely brown all around. COS by embargoing approximately 3 lbs. Many insects crawled out of small reach in cooler with food in it. Observed many insects crawling across food holding units during inspection.

Inspector notes: Storing Raw uncooked bacon above street corn I walk in cooler. COS by moving corn to different refrigerator in establishment at this time.

Inspector notes: PIC states he only cleans in use utensils every night. COS by going instructing PIC that it's required to be done every 4 hours or replaced with clean ones every 4 hours. Grill surface has overly extreme amount of old grime buildup and has not been cleaned any better than the last few times I was here. Crock pot warmer inside with old crusty chili that states he has not cleaned it since yesterday sitting in use on counter. COS by having PIC place at Three Compartment Sink to be properly cleaned and sanitized.

Inspector notes: Shredded pork in table top warmer at 65 degrees over 2 hours. COS by embargoing approximately 3 lbs due to employee chose to.
