Have explained this several times in the past this is not an approved thawing method. Educated proper thawing again.

Cabneits holding clean dishes are missing their doors and dust and other contaimants are gathering on the dishes. Using single-use grocery bags to store foods, using single-use to-go containers multiple times to store foods. Food storage containers must be able to go through a wash-rinse-sanitize step and are food-grade safe. Explained this several times to the owner.

Inspector notes: 1200-23-01-.06(3)(e) Several times when the inspector was opening up food containers or looking at something the owner would state "That's mine" or "That's my food I am going to eat" Educated these foods must be stored seperatly from customer's food and should have an identifing label such as a bucket in the bottom of the fridge that stores everything and says "Employee Personal Item Storage". Also educated cooking equipment or other applainces that does not serve a purpose for the establishment is not permitted to be inside the establishment.
