Inspector notes: There is cooked ground beef in the reach in cooler that has an internal temperature of 107f at 30 min cooling according to the pic. It is cooling in a plastic container with aluminum foil and a tight fitting lid on top. I took time to educate the pic about this topic. She transferred the taco meat to a thin metal container and vented the lid.
