Observed personal drinks in a cup with lid, cell phones, and purses, sitting on racks next to foods, as well as on top of cold hold units. Ensure that a designated area is available for only personal storage of items, eating, drinks, etc. Ensure that personal drinks are stored in a cup with lid and straw. No bottles.
Employee eating at preparation table where can openers, and other equipment are stored. Ensure to provide a designated area for employee use, that is away from food and food contact surfaces.
Observed multiple wet towels laying around utensils, cutting boards, and surfaces. Towels that are used for wiping surfaces should be stored in sanitizing solution at all times in between uses. Ensure that towels that are used to handle hot handles, are dry and maintained cleaned. Rotate as often as necessary to prevent buildup/contamination.
Sanitizer that is used in dining room and kitchen, for cloth towels used to wipe surfaces and tables, was at 0ppm. Solution is currently being made with water, soap, and bleach. Ensure to prepare solution with only bleach and water and that concentration is maintained between 50-100ppm.
Thorough cleaning of rubber seals, walls near hot tables, and sinks should be conducted to remove buildup.
