Observed charro beans prepared yesterday, in walk in cooler that read between 51 to 54 degrees F. All other prepared and stored foods were at proper temperatures. Ensure that foods are being properly cooled to maintain 41 degrees F and below prior to being sealed, stored, or frozen.
Ensure that all wiring, monitor screens, etc that are above preparation areas and hot holding areas, are cleaned thoroughly to remove dust and grease buildup.
Thorough cleaning of ice machine should be conducted to remove buildup along edges of interior.
Bleach solution for table wiping towels had high concentration of bleach, Issue was corrected on site. Ensure that bleach solution used for sanitizer is maintained between 50-100ppm.
