Cold hold unit was reading at 68 degrees F internally. Place a thermometer in front area nearest door. Foods on line (diced ham, raw chicken, asada, etc) were reading 46-57 degrees F. Ensure to have unit maintenanced to ensure that cold holding temperatures of 41 degrees F and below are able to be maintained at all times, whether unit is heavily used or not.
Ensure to conduct a thorough cleaning of all refrigeration units to remove food buildup.
All personal items including sweaters and personal drinks should be stored in a designated area away from food and food contact surfaces.
Handles of reach in cooler are currently material ropes. Ensure that proper handles made of proper material are installed. Handles should be smooth, easily cleanable, and non absorbent.
Container of diced potatoes was sitting on floor under hand sink. Foods stored in refrigeration unit were not properly covered. Ensure to cover all foods stored in cold hold units. Ensure to store all foods 6 inches or more off floor.
