Violations — Feb 20, 2026 Inspection
Raw meats/foods should be stored below and/or away from beverages and ready to eat foods. Organize shelves as needed. Raspa shaver had heavy black buildup that is falling onto clean surfaces, Ensure to clean and sanitize to remove all buildup.
Sanitizer for cloth towels was not at proper concentration. Ensure that concentration is maintained for sanitizing solutions, at 50-100ppm.
Nail polish remover, hand sanitizer, WD40, rat glue traps, etc should be stored in a designated area away from food and food contact surface. Good reorganizing of area and storage area should be conducted to ensure space is available for employee items, chemicals.
No Certified Food Manager was present with a valid certificate. Ensure to enroll and complete course by reinspection date.
Observed foods that were in reach in cooler, with preparation date of 2/10/26 and 2/3/26. Picadillo and chicken were discarded. Ensure that foods stored longer than 24 hours are labeled with expiration date of no more than 7 days total, with preparation date counting as day 1.
Provide chemical test strips for bleach solutions. Ensure to maintain solutions at 50-100ppm.
Ensure to post most current permit and ensure to renew permit within 10 days. Notice was left on 2/10/26 and no contact has been made to department for license renewal.
At beginning of inspection, several plastic food containers and lids were sitting in hand sink. Manager explained that he leaves them in there to air dry after being washed. Inspector instructed wares to be put to wash again, as they have been sitting in contaminated hand sink. Hand sink is only for hand washing and should be supplied with hand soap, not watered down dish soap.
Food storage containers that are cracked and broken should be removed and not used. Floor tiles that are missing and broken should be repaired and floor should be smooth, easily cleanable, and non absorbent. Rubber seals on refrigerator doors should be repaired if peeling off and torn. Walls in storage area by gordita area should be tight fitting in areas where they have begun to peel off wall. Refrain from using chicharron plastic containers for rice storage.
Dead roach in hand sink in storage room by unused bathroom should be removed. Maintain areas clean. Pest control services conducted should be conducted properly and with services done inside food establishment, ensure that all foods and wares are properly covered, and that they also be properly washed and sanitized as needed prior to use.
Place a splash guard between hand sink and three compartment sink at both hand sinks that are next to the ware washing sinks. Ensure to store small buckets with sanitizer and cloth towels, off the floor 6 inches or more.
Scoop for ice in small ice chest by raspa shaver, must have handle sitting outside of ice. Only use proper dispensing utensils for maseca, flours, sugar, etc. Plastic bowls or containers should not be used.
Ensure to clean walls, behind ware washing sinks, air ducts, and ceiling surfaces metal racks and shelves where foods are stored, to remove buildup.
