Observed pinto beans and chicharron guisado that was made yesterday, to not be held at proper cold holding temperatures. Ensure to cool as follows: Once food is removed from stove, and reaches 135 degrees F, food must be cooled from 135 to 70 within 2 hours max, and once food has reached 70 degrees F food should be cooled to 41 degrees F within 4 hours or less. Ensure that foods are holding at 41 degrees F prior to storing away.
Observed raw meats being stored in package and container, to be stored above cooked tripas, and cooked chicharron guisado. Ensure that all raw product is stored below and/or away from ready to eat foods.
Ensure that when ice baths are used to cool foods that ice refilled when frozen. At this time, food had been cooling for about an hour and a half and was currently sitting in melted hot water. Ensure to continuously stir foods to release heat to cool properly. Foods should be monitored, and can also be portioned smaller to spread food thinner to cool quickly and properly.

Once food is removed from cooking, food is allotted 2 hours maximum to cool from 135 to 70 degrees F. Food is then alloted 4 hours maximum to cool from 70 to 41 degrees F. Foods can then be stored away.
Floor plastic lining is peeling, and cracked under three compartment sink, as well as has openings on surfaces. Ensure that floor is sealed, smooth, easily cleanable, and non absorbent.

Appears that cooling is not being conducted properly. Employee explained they leave food out to cool for two hours, then place in refrigerator. Pinto beans from day prior was at 52 degrees F. Ensure to cool in the following manner: 1. Once food is removed from cooking, and reaches 135 degrees F, food is alloted 2 hours to be cooled from 135 to 70 degrees. Food is then alloted 4 additional hours if needed, to cool from 70-41 degrees F. Food can then be stored away.
Foods on steam table, were not being held at proper hot holding temperatures of 135 degrees F. Foods ranged in btween 126 degrees F and 132 degrees F.
Rubber seals on refrigeration unit doors should be replaced when torn, cracking, and peeling off. Ensure to replace and that surfaces are smooth, easily cleanable, and non absorbent.
Both hand sinks were blocked from readily accessible use, with items being stored in sinks. Hand soap not available. Soap that was available for hand washing was labeled by Sysco for pots and pan detergent. Ensure that all hand sinks are easily accessible and that soap and paper towels are available at all times.
Back door that leads to exterior of building had slight opening along bottom. Ensure that all exits are tightly sealed.
Permit has not been renewed for this year. Ensure to renew, and post valid permit in public view.
