Observed that the establishment was NOT keeping the shellstock tags or writing down the day that they sold the last oyster from the bags they come in. Ensure that the name, address, and CERTIFICATION NUMBER of the shucker, packer or repacker of the MOLLUSCAN SHELLFISH are labeled on the package it came in.
