Pre-made fruit cups and fruit peeled on displayed temped between 41-45F. Ice only cools where in contact with food. Any food not in direct contact is not at proper cold hold temp. Time as a public health control may be used for fruit cut/peeled but would need to be discarded after 4 hours or 6 hours if temp does not go above 70F. Food temp was lower this visit but so was overall ambient temp.
Ensure that there is a certified food manager present during all hours of operations and certification must be posted in a place conspicuous to the public.
