Observed employee cutting raw meat wipes gloves with dirty towel take order with gloves still one. Same employee also walked in and out of establishment, took payment and then put gloves on and resumed cutting meat with out washing hands.

Observed cooling of refried beans beginning. Employee explained an improper cooling procedure. No thermometers were presented which should be used for cooling to be conducted in the following manner: Once food is removed from heat and cools to 135 degrees F, food is allotted 2 hours to cool from 135 to 70 degrees F. Food is then allotted 4 additional hours to cool from 70 to 41 degrees F. Food should not be stored until at cold holding temperatures of 41 degrees F and below. Chicharron guisado p
Shredded cheese container was stored on pooling water and at 70 degrees F. Cheese was being stored in same area of hot holding unit. Observed carne asada, in cold hold unit, to be at 51 degrees F. Ensure that all foods held at cold hold units, are held at 41 degrees F and below at all times.
Cloth towels were being stored in solution without any bleach. This container was being stored in hand sink. Observed dishes being washed improperly. Tortilla chips were being stored in plastic to go grocery bags. Observed rice and flour being stored in large plastic sterilite containers. Ensure that all foods are stored in food grade materials only. Bleach concentration was high for cloth towels solution at waitress area. Ensure to maintain concentration between 50-100ppm.
Provide thin probe thermometers for employee use. Provide thermometers in all refrigeration and cold hold units. Provide test strips for bleach water.
Reach in cooler near back drive thru area was reading at 50 degrees F, as well as cold hold unit nearest ware washing which was at mid 50s. Ensure that these units are serviced and ensure that cold hold temperatures are able to be maintained at 41 degrees F and below. Foods must be able to be held at proper cold temperatures at all times.
Hand sink did not have hand soap available. Hand sink had container with cloth towels in sanitizing solution being stored in hand sink. Ensure that hand sink is readily available and only used for hand washing practices.
Ensure all foods stored in coolers are properly covered. Observed plastic bins with masa balls for tortillas stored on the floor. Issue was corrected. Observed large bins with ice being stored on floor when filled with ice then placed on preparation table for cooling. Ensure that all foods and wares are stored 6 inches or more off floor.

Refried beans that were prepared yesterday were reading at 61 degrees F at time of inspection. Proper cooling procedures are not being followed. Ensure to cool in the following manner: Once food is removed from heat and is at 135 degrees F, food is allowed 2 hours max to cool from 135 to 70 degrees F. Manager stated they would rather use gloves as a barrier at this time, to correct issue. Issue was corrected on site.
