Observed employee mopping up water and observed mop sink backed up with water. Asked employee and PIC about where it gets dumped, both admit they have been dumping it outside. Informed PIC that a mop sink is only for the mop water disposal. 5-403.11(A) Sewage disposed through public sewer system.

Observed mop sink backed up, back up is not overflowing but does have a leak that is spreading along the wall of the back kitchen. Plumbing must be fixed so that waste water is not backing up onto kitchen floor.
Observed no chlorine in the 3 compartment sink. Informed PIC to add chlorine until a concentration of 50-100ppm was reached. EHO educated PIC on how to test for correct level of chlorine. 4-501.114(A) Chlorine sanitizing solution shall have a minimum temperature based on the concentration and pH of the solution as listed in the following chart.
