Walk-in cooler was not operating as expected, as some TCS items such as soft cheeses (Mozzarella) were being stored in this walk-in cooler, along with containers of ice-cream mix. Ice-cream mix, after speaking with management and owner, is shelf-stable, and will be moved to a different walk-in cooler of another establishment owned by the same owner.
