Refried beans that were cooked yesterday were at 45.8 and 46 degrees F. Beans were asked to be discarded. Ensure that all foods are cooled properly in the following manner: 1. Once food is removed from cooking/heat and reaches 135 degrees F-that is when food begins to be monitored. 2. Food is alloted 2 hours maximum to be cooled from 135 to 70 degrees F. 3. Cloth towels used for sanitizing tables, were being stored in a solution lacking chlorine. Solution was said to be made of bleach, soap, and water. No reading of sanitizer. Ensure to use bleach and water and maintain concentration between 50-100ppm for proper sanitizing.
All personal items including beverages should be stored in a designated area away from food and food contact surfaces. Personal beverages should be stored in a cup with lid and straw.
