Cooked chorizo sitting on grill was at 114 degrees F. Ensure to either hold foods at hot or cold temperatures (135 degrees and above OR 41 degrees F and below) at all times. If foods are to be held at room temperature, ensure to mark with time control of no more than 4 hours.
All personal items (i.e purses, personal drinks, etc) should be stored in designated area away from food and food contact surfaces. Personal drinks should be stored in a cup with lid and straw.

Dishwashing machine was not at proper concentration and currently reading below 50ppm. Ensure to maintain sanitizing solution between 50-100ppm. Clean fountain drink dispenser to remove buildup along backwall and nozzles.
Observed ready to eat foods (i.e. cheese, cooked crispy bacon, tortillas, etc) being touched with bare hands.
Employees who do not have food handler certificates must be certified and provide certificates within 10 days. If issues occur, please inform inspector with date of class to allow for adequate time. 210-355-2181
Observed employee lick fingers, then proceed to handle cooked food. Observed employee wipe face then proceed to prepare masa. Ensure that hand washing is properly conducted each time a task is changed (i.e. preparing food, cleaning and touching face, touching other items that are not food, etc.) If gloves are worn, ensure that hands be washed each time a new pair of gloves in worn.
Ensure to provide thermometers and that employees are calibrating and utilizing thermometers properly and routinely.
All personal drinks, cell phones, and articles of clothing, should not be stored on shelves where foods and single service items are stored, nor should they be stored on preparation tables. Ensure to provide a designated area away from food and food contact surfaces.
Remove foil that is lining shelves. Remove cardboard that is covering vent above grill area. Ensure that all surfaces are smooth, easily cleanable, and non absorbent.
Walls, floors, ceiling and electrical wiring in kitchen and storage area should be cleaned to remove heavy food and grease buildup. Areas behind and in between equipment are present with debris, etc.
Ensure all foods stored in walk in cooler are covered properly. Store all packages of drinks/foods 6 inches or more off floor.
Hand washing sink was blocked by large pans on floor, and sink did not have hand soap. Ensure that sink is readily available and easily accessible. Ensure to have sink supplied with soap at all times. If issues continue to arise with location of hand sink, a second hand sink will be required to be installed.
Ensure that three compartment sink is not used as a hand washing sink. Employee did wash hands at this sink, when asked to correct his handling of cooked foods.

OBSERVED FOODS TO HAVE LABELS SHOWING PREPARATION DATE OF WHEN FOODS WERE MADE. ENSURE THAT IF FOODS ARE STORED LONGER THAN 24 HOURS, HAVE A DATE MARKING LABEL SHOWING EXPIRATION DATE OF NO MORE THAN 7 DAYS. OBSERVED OPENED PACKAGES OF FOODS THAT ARE NOT DATE MARKED AS WELL, AND SHOULD BE DATE MARKED WITH EXPIRATION DATE OF NO MORE THAN 7 DAYS.
CLOTH TOWELS BEING USED TO WIPE DOWN TABLES WERE BEING STORED IN SOLUTIONS THAT WERE NOT MARKING PROPER CONCENTRATION FOR SANITIZING. ENSURE THAT CLOTH TOWELS ARE STORED IN SANITIZING SOLUTION AT PROPER CONCENTRATIONS.
OBSERVED OPENED PACKAGES OF HAM, QUESO, HALF CUP AVOCADOS, ETC IN REACH IN COOLERS TO NOT BE PROPERLY COVERED. OBSERVED FOODS IN WALK IN COOLERS TO NOT BE PROPERLY COVERED. ENSURE THAT ALL FOODS STORED IN REFRIGERATION UNITS ARE THOROUGHLY COVERED TO PREVENT CONTAMINATION.
LID OF DEEP FREEZER IS NOT IN GOOD CONDITION. INSULATION IS EXPOSED ON SITES, WIRING IS BEING USE TO HOLD LID INTERIOR TOGETHER, CRACKS ARE PRESENT, ALONG EDGES OF FREEZER AND IT'S LID. ENSURE THAT LID AND FREEZER ARE REPAIRED TO BE SMOOTH, EASILY CLEANABLE, AND NON ABSORBENT. MAKE REPAIRS NOT NECESSARY TO REPLACE ENTIRE UNIT, BUT SUCH AREAS MUST BE CORRECTED. ENSURE THAT CUTTING BOARDS, BOWLS, AND PLATES THAT ARE USED FOR CUSTOMER SERVICE AND FOOD PREPARATION ARE IN SOUND CONDITON AND FREE FROM
HAND SINK WAS BLOCKED FOR EASY ACCESS TO SINK. ENSURE TO REMOVE MOP BUCKET, LARGE POTS, ETC, TO ENSURE HAND SINK IS READILY AVAILABLE AND NOT POSTONING USE.
OBSERVED PERSONAL BEVERAGES BEING STOREDON TOP OF MICROWAVE NEXT TO FOODS THAT ARE TO BE SERVED. ENSURE THAT ALL PERSONAL BEVERAGES AND ITEMS ARE STORED IN A DESIGNATED AREA, THAT IS BELOW AND AWAY FROM ALL FOOD AND FOOD CONTACT SURFACES.
