Bleach water was high in concentration. Ensure to maintain between 50-100ppm for proper sanitization. All personal medication should be stored in a designated area away from food and food contact surfaces.
Observed employee put on a hair net when inspector arrived, and touch eyeglass, then proceed to handle scoops for ingredients and clean pans. Employee was instructed to wash hands prior to handling foods and wares.
Observed personal drinks being stored on rack with clean dishes. Ensure to store all personal items in a designated area away from food and food contact surfaces.
Thoroughly clean vent hood, walls, floors, to remove grease and dust buildup.
Metal racks in refrigeration unit that are peeling and rusting, should be repaired to be smooth, easily cleanable, and non absorbent.
Observed dust accumulated on walls above area where uncovered bowl of flour was being stored. Observed uncovered salsas being stored next to hand washing sink, where splashed water was falling into from hand washing. Observed uncovered chile rellenos sitting right under vent in refrigeration unit, where dust is accumulated. Ensure to install a divider between hand sink and preparation area on side, to prevent contamination from hand washing sink.

Raw shelled eggs were being stored on rack above uncovered refried beans and produce. Bowl used for whipping raw eggs, was being stored on top of compartment where ready to eat condiments are being stored. Ensure that all raw products are stored above and/or away from ready to eat foods.
Observed improper ware washing. Ensure that all washing is done in following order: 1. WASH (soap and water) 2. RINSE (water) 3. SANITIZE (bleach concentration between 50-100ppm). Observed sanitizing solution used for wiping surfaces in kitchen to be below sanitizing range requirement. Ensure to sanitize at 50-100ppm.
Venthood is due for a cleaning this month. Ensure cleaning is conducted to remove grease buildup. Observed rubber gaskets in deep freezer lids and reach in coolers to have buildup and need to be cleaned to remove black residue. Plastic door dividers were laying on rack where clean wares are stored. Walls and racks should be cleaned to remove build up. All surfaces should be clean and free of debris to sight and touch.
Ensure that no items are stored in hand washing sinks. Hand sink in women's restroom was missing paper towels.
Larger microwave has very rusted and chipping interior top. Cooked shredded chicken was being stored in a reused baking powder container. Strainer wiring was in bad condition. Gaskets in reach in coolers were tearing. Ensure that all surfaces and wares where foods are prepared and stored are in sound condition and smooth, easily cleanable, and non absorbent. To allow for proper and thorough cleaning. Observed lid for maseca to be broken.
Observed wet multi use cloth towel stored on top of preparation area. Ensure that cloths, when not in use, as stored in sanitizing solutions.
Scoop handle for sugar was stored on top of sugar. Ensure that handles for any ingredients are stored out of the ingredient. Clean utensils and wares that are stored on racks should be stored on clean and dry surfaces and containers. Do not allow for utensils to sit in pooling water.

Observed foods with labels showing foods are held for 8 days. One food item did have a label showing food is held for 12 days. Ensure that all prepared foods, that are held longer than 24 hours, are date marked for 7 days, with preparation day counting as day 1.
