Hot foods have proper labels showing hold time for foods, but not cold foods. Ensure to place marker stickers for proper time control. Tomatoes were reading at 43 degrees F. Ensure to maintain at 41 degrees F at all times.
Provide Food Handler certificates upon request for any employees working their shift. No proof of certificate for only employee on site.
Sanitizer for knives was at 0ppm. Employee refilled to be at proper sanitizing concentration. Ensure that shift changes are communicating to ensure the incoming shifts are aware at what time the solution was made. Employee explained the sanitizer is changed hourly, but at this time there was no notation as to what time the solution was made.
Certified Food Manager, with certificate was not present during time of inspection. Certificate for Alma is expired and should be removed from wall. Ensure there is at least 1 Certified Food Manager present during all hours of operation.
Personal beverages and personal items should be stored in a designated area or shelf that is only for personal use. Personal items should not be stored on preparation tables, on soda syrup boxes, etc.
