Uncovered containers of raw meat was being stored above uncovered container of cooked rice. Ensure to store all raw products below and/or away from ready to eat/cooked foods
Employees were not observed to be washing hands properly. No hand soap at hand sink.
Observed spray can of hot shot and flea powder, as well as medication pills, and makeup palette being stored on top of single service items, as well as next to canned foods, etc. Observed spray bottle storing sanitizer that was not properly labeled. Observed masa for tortillas being stored in trash bags. Ensure that all foods are stored in food grade bags/containers only. Sanitizer made of bleach and water should be maintained between 50-100ppm.
Employes working in kitchen should have food handler certificates obtained and kept on site.
Provide sanitizing test strips to ensure sanitizer is being prepared properly.
Observed prepared foods and opened packages of foods that did not have proper date marking labels. Ensure that foods are stored no longer than 7 days, with preparation day/opening day counting as day 1.
Hand sink in kitchen was not supplied with hand soap and paper towels. Issue was corrected on site.

Ware washing sink had uncovered menudo and package of chicken that was defrosting at room temperature. First two compartments were filled with dirty dishes. Ensure that sink is properly cleaned and sanitized prior to preparing foods in compartments. Ware washing sink had no hot water due to cutting off at bottom. Ensure that hot water is readily available at all times.
Thawing at room tmperature is not allowed. Ensure to thaw in following manners: in microwave prior to cooling, under running room temperature water, or overnight in cold hold unit holding 41 degrees F and below.
