Inspector notes: Observation: Observed in use wiping cloth quaternary ammonium compound sanitizing solution at 0 ppm. Corrective Action: Discussed proper minimum concentration for quaternary ammonium compound sanitizing solutions (200-400) and the frequency for changing out sanitizing solutions with the PIC. The PIC replaced the sanitizer solution (Verified 200 ppm Quat) and will ensure that all sanitizing solutions are changed out at a minimum of every 4 hours.

Inspector notes: Observation Observed dish machine in main kitchen area not reaching proper minimum temperature (160 degrees Fahrenheit). Corrective Action Discussed proper minimum temperature and testing frequency for dish machine with the PIC. The PIC placed a ticket to have dish machine serviced by a licensed professional. This will be rechecked by the Health Department.
