Inspector notes: Observation Observed potentially hazardous TCS foods hot holding below 135 degrees Fahrenheit. Observed Meatballs hot holding on the main service line hot holding below 135 degrees Fahrenheit during business hours (Meatball 87F, Meatball 125F). Corrective Action Discussed proper reheating procedures for potentially hazardous TCS foods with the PIC. The PIC properly reheated the Meatballs for hot holding (Meatballs 182F) and will educate employees on proper reheating procedures.

Inspector notes: Observation Observed dish machine in main kitchen area not reaching proper minimum temperature (160 degrees Fahrenheit). Corrective Action Discussed proper minimum temperature and testing frequency for dish machine with the PIC. The PIC placed a ticket to have dish machine serviced by a licensed professional. This will be rechecked by the Health Department.
