Inspector notes: Observed quaternary ammonium sanitizer in the 3-compartment sink exceeding the maximum concentration allowed. Concentration at 500 ppm. Corrective action (CA): Quaternary ammonium sanitizer shall have a concentration between 150-400 ppm. Person in charge (PIC) was informed to dilute sanitizer in the 3-compartment sink to ensure the concentration is at an optimal concentration of 200 ppm quaternary ammonium and to use the sanitizer test strip at every batch. Also, the sanitizer dispenser shall be serviced to ensure the right concentration is provided.
