Inspector notes: Observed time/temperature control for safety (TCS) foods in walk-in cooler being cold held above 41°F. Ambient temperature of unit was 43°F with the temperature of TCS food ranging between 42-43°F. TCS foods must be cold held at 41°F or below. Food was not discarded but cooler must be fixed within 72 hours. Health Authority recommends lowering ambient temperature of unit to about 37°F.
