Inspector notes: Observed several food items stored uncovered in bakery area (baked goods on display and bread on shelves) of front food service area main kitchen and bread on steamtable in prep area of main kitchen. C/A: Unless food is actively cooling, all food must be stored protected from contamination. COS: All food covered. *Facility must implement equipment to maintain baked goods on display in bakery covered to prevent contamination. Food items must be protection from overhead contamination from all elements.*

Inspector notes: Observed several dishes wet nested along dish racks in ware washing area of main kitchen. C/A: After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Inspector notes: 1. Observed cell phone stored on top shelving rack amongst clean equipment and service items above prep table in ware washing area of main kitchen. 2. Observed employee food container stored on lower shelving amongst food service food and equipment near steam well in ware washing area. C/A: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: All items stored correctly.
