Inspector notes: Observed handwashing sink in scheduled kitchen space sink blocked with rolling cart and colander stored inside hand sink. COS: PIC removed the collindar from hand sink and relocated the cart. Reminded PIC that the hand hand sink must be accessible at all times. CA: A handwashing sink shall be maintained so that it is accessible at all times for employee use and a handwashing facility may not be used for purposes other than handwashing.

Inspector notes: Observed TCS foods (raw chicken, raw beef, shredded cheese, cooked guajillo peppers sauce) stored on counter that were not cooling or currently being prepared. Foods were removed from cooler 15-20 minutes prior to inspection. COS: Foods relocated to walk in cooler to cool back down. Discussed with PIC to not remove foods from a temperature controlled device such as a cooler until the foods are ready to be prepared right away to avoid temperature abuse. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above.
