Inspector notes: Establishment using reduced oxygen packaging (ROP) without a proper HACCP plan. Establishment uses ROP for several food items including raw salmon and holds the food for more than 48 hours. A food service establishment shall submit a HACCP plan to the health authority prior to engaging in ROP that involves holding ROP food for more than 48 hours and is not for personal use. Corrective Actions: PIC confirmed that ROP will discontinue until a HACCP plan is submitted and reviewed.

Observed another lid to either septic tank or grease trap to be missing screws. Newly constructed or converted fixed food service establishments shall dispose sewage through an approved facility that is: A public sewage treatment plant if connection to such system is available within two hundred feet (200’) of the property line, or available in a public right-of-way abutting the property of the fixed food service establishment; or An individual on-site sewage disposal system that is sized, constructed, maintained, and operated according to law.
