Inspector notes: Observed several tubs of queso held out of the temperature range of 41 and below for more than 24 hours after the prep date, one tub specifically having a temperature of 98F. All TCS foods must be cooled from 135-70F within 2 hours and from 70- 41F within 4 hours. Use shallower pans and lower the amount of product placed in pan to ensure proper cooling times are met consistently.

Observed an employee working with raw chicken start work with ready to eat tortilla chips. Employee was stopped, removed gloves and washed hands and chips were discarded. Employees were also observed using towels on their aprons to wipe hands off, hands must be properly washed and cloth towels shall not be used unless maintained wet in sanitizer.
