Observed knives on top of the small prep table on a tray with a box of gloves sitting directly on top of the knife blade. Scoop stored in bulk flour with handle touching the product. Please store with handle up and out if product.

No air dry step. After sanitizing, utensils need to air dry. Discussed with employee. Clean equipment stored in metal shelving bins above the three compartment sink were observed with visible debris due to their storage location and storage of used scrubber pads above the utensils.
