Ensure that all surfaces and wares are in sound condition and maintained to be smooth, easily cleanable, and non absorbent.

Observed beans that were prepared day prior to mark at 47 and 52 degrees F. Beans should not be used for customer service and should be discarded. Ensure to follow proper cooling procedures as follows: 1. Once food is removed from heat and cooking, food is allotted 2 hours maximum to cool from 135 to 70 degrees F. 2. Food is then allotted 4 additional hours maximum to cool from 70 to 41 degrees F. 3. Once food is cooled to 41 degrees F, food can be covered and stored away.
Observed no thermometer in cold hold unit. Ensure that thermometers are present in all refrigeration units.
Cold hold unit was not properly holding cold hold temperatures of 41 degrees F and below. Unit had much pooling water and no air flow was evident. Ensure that unit is maintenanced and ensure foods are held at 41 degrees F and below. Food was removed and relocated to walk in cooler for meanwhile.
Rubber seals in cold hold unit are cracked and tearing. Observed metal racks with peeling and cracked paint coating. Ensure that gaskets are replaced and racks repaired to be smooth, easily cleanable, and non absorbent.
Observed several food items sitting on floor. Ensure that all foods and beverages used to serve customers, are stored 6 inches or more off floor. Pans of raw meat were being stored on pooling water in cold hold unit.
Thorough cleaning of all floors under fryers and grill, as well as along floors in establishment. Ensure to clean refrigeration units along gaskets, and doors to remove buildup of food/grease.
