Chorizo that was cooked day prior, was sitting at room temperature for about 2 hours (at time of inspection) Chorizo read at 61 degrees F. Obseved cooked bacon grease that is stored at room temperature for longer than 24 hours, that is reused for refried beans, but at room temperature as well. Ensure that all foods that are not held under cold (41 degrees F and below) or hot (135 degrees F and above) holding are time stamped with no more than 4 hours expiration time.
Trash can bags, sterilite containers, Tru Living containers, were being used for food storage. Ensure that all foods are stored in original packaging or in food grade material. Ensure that plastic containers that are meant for one time use, are discarded after product has finished (chicharron containers)
Ice machine lid is broken with cracks, where insulation of lid is beginning to be exposed. Ice machine has screws inside interior panel that is causing rust to accumulate and drip into ice. Ensure that machine is properly repaired to ensure smooth, cleanable, and non absorbent surfaces. Ensure that ice machine is cleanable along interior to remove and prevent buildup. Cardboard wrapped foil should not be used for lids of bacon grease. Ensure to use proper made lids.
No foods, ingredients, produce, coke bottle packages, etc should be stored on floor, Ensure all items are stored 6 inches or more off floor. Observed mop sink next to three compartment sink, that will have to have a splash guard built in between to prevent contamination of three compartment sink.
All personal items including but not limited to purses, sweaters, personal drinks, etc should be stored in a designated area away from food and food preparation areas.

"commercial can liners" are currently being used to store masa. Any foods that are covered and/or stored should only be stored in food grade containers. Cooked rice was being stored in a sterilite container, which is not marked as food grade. Ensure that all foods are stored in food grade material only.
Ice machine panel has bolts that are rusty and had buildup, along with condensation dripping into ice that is served to customers. Issue was cleaned on site. Ensure to thoroughly clean all surfaces to prevent buildup and contamination of ice.
Observed personal drinks being stored on preparation table where produce is cut, and other foods are stored. Ensure there is a designated area for employee use. Ensure that all personal drinks are stored in a cup with lid and straw.
