ENSURE IF FOODS ARE BEING HELD OFF TEMPERATURE TO HAVE PROPER TIME AND TEMPERATURE CONTROLS IN PLACE. LOGS SHOULD BE PROVIDED AND ENSURE TO SHOW THAT FOODS ARE CONTROLLED WITHIN THE 4 HOUR RANGE. EMPLOYEE STATED CHORIZO HAD JUST BEEN PUT OUT ON COUNTER TO SERVE. NO LOGS WERE PROVIDED AT THIS TIME
