Inspector notes: Observed small plastic and metal cups without any handles stored in food containers of flour and cornmeal in the dry storage area, a food container of pasta noodles in the reach-in freezer, and a food container of diced grouper at the oyster bar. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container; and in food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS: Chef removed the metal cups from the food containers and moved to the dish area, while discarding the plastic cups.

Inspector notes: Observed salmon, tuna, and beef stored in walk in cooler reading at 49, 45, and 49 degrees F respectively. Ambient temperature of walk in cooler read 39.4 degrees F. Discussed with PIC and instructed to discard all prepped meat held above 41 degrees F. Instructed PIC to reduce ambient temperature of cooler and to educate staff on appropriate thawing and cold storage methods. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC discarded all out of temperature products stored in walk in cooler.

Instructed PIC to renew CFSM certification, and to ensure that at all times there is one member of staff at all times with CFSM certification. CA: At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food safety manager who has shown proficiency of required information through passing a test that is part of an accredited program that conforms to the national standards for organizations that certify individuals.
